Hard-boiled eggs blended into a decadent dessert might sound crazy, but trust us: it’s divine. This keto-friendly recipe was brought to life by Maria Emmerich, a certified nutritionist, exercise physiologist, mother, and bestselling author using Breville’s 3X Bluicer. Compared to other fruits, strawberries are low in sugar and calories. They’re also packed with vitamins, minerals, and antioxidants. Maria brings a twist to this chocolate-strawberry delight by juicing the berries first and then blending in hard-boiled eggs for a sweet, creamy texture that might make you initially apprehensive—until you taste it. Juicing strawberries and blending hard-boiled eggs into a chocolate mousse may sound odd, but it’s Maria’s secret ingredient for a fantastic keto pudding. You only need 10 minutes to whip up this tasty treat and trust us, you’ll be making this recipe over and over again! It’s that good.

Keto “Berry” Chocolate Mousse:

Prep: 10 minutes, plus 11 minutes to boil the eggs.

Cook: 1 minute

Yield: 4 Servings

1 pound fresh or frozen strawberries, thawed 

2 tablespoons keto confectioners sugar (or equivalent natural sweetener) 

1 teaspoon gelatin or plant-based alternative 


5 hard-boiled eggs, peeled 

1 cup coconut milk (heavy cream, if not dairy-free) 

1/4 cup keto confectioners sugar (or equivalent natural sweetener) 

2 1/2 tablespoons unsweetened cocoa powder 

1 teaspoon vanilla extract (or banana extract) 

Pinch of fine sea salt


Place the strawberries into the Breville 3X Bluicer with a saucepot at the end to catch the strawberry juice. Turn the juicer onto level “5” and juice the strawberries for 1-2 minutes, or until the juice is out of the strawberries. Stir in the natural sweetener and set aside. 

Place the hard-boiled eggs, coconut milk, natural sweetener, cocoa powder, vanilla, and salt into the 3X Bluicer.  Press “5” to blend for one minute or until very smooth. Divide the pudding into 4 serving bowls (martini glasses also work great). Set aside. 

To complete the strawberry panna cotta mixture, use a whisk to sift in the gelatin or plant-based alternative thickening agent. Allow the gelatin to soften for 1 minute and then place the saucepan over high heat and whisk until the strawberry juice comes to a boil.  

Use a measuring cup to gently pour the strawberry panna cotta mixture over the mousse. Cover and place the dessert into the fridge overnight to rest.
